Margarita Marinade for Bar-B-Q

We have used this “spirited” marinade more than a few times so far this summer because it’s so delicious. Easy to prepare, I make it 24 hours ahead and let the chicken take a nice, long soak in these delicious ingredients:

1/4 cup olive oil

1/4 cup lime juice

Zest of one lime

1/4 cup Tequila

Chili paste to taste (it comes in a toothpaste looking tube in the produce section- Recipe calls for adobo sauce, but I actually don’t like that stuff.)

2 tablespoons orange juice

2 tablespoons minced garlic

1 tsp sugar

2 tsp salt

1 tsp pepper

chicken (I use thighs and breasts-bone in)

 

Mix all of the ingredients (minus the chicken) in a bowl..taste test the marinade and add more of whichever ingredient you prefer. I usually add more chili paste, tequila and lime because I love that flavor combo. The longer the chicken sits in the marinade the better.

GRILL.

Pair with rice, veggie kabobs and fruit. If you want, you can slice some limes in half, poke the insides a bit with a fork and let them sit in some tequila for a few hours.. bar-b-q them till they get grill marks.  Great garnish and an added kick of  boozy lime for those who want it.

I bought this cookbook as a shower gift, but after leafing through it purchased a copy for myself as well.  I have thoroughly enjoyed it.
