Dinnertime just seems to pop outta nowhere these days- It’s like intellectually I know it’s coming, but I’m always somewhat strangely surprised when the moment actually arrives. Reminds me of my kids’ loose teeth.. they’d be fussing with them for days, grossing their siblings out, yanking and pulling and suddenly it was in their hand…and I’d be shocked…every single time. And then (of course) there’d be a frantic, last minute (didn’t see THAT coming!) search for a dollar bill to hide under the pillow..
or in this case- a potato to put in the oven.
The “recipe” below is basically a bunch of vegetables (peppers, onion, spinach..) simmered in a can or two of diced tomatoes with a generous splash of red wine, LOTS of garlic and spices.. cooked noodles, crumbled silken tofu on top..baked until bubbly and golden – delicious.
